Easy Cherry Cobbler Recipe

It's been awhile since we brought you a recipe and with Memorial Day just behind us we thought this summer dessert would be right on point. I was at my parents house this past weekend and my dad's cherry tree was full of cherries for the picking. So I helped myself (there's nothing like fresh cherries) and my mom talked me into making a fun and easy Southern dessert. Now we need to get one thing out in the open...THIS IS NOT A HEALTHY DESSERT. Just a little disclaimer. :-)

Ingredients:
1 cup self rising flour
1 stick of margarine
1 to 1 3/4 cup sugar
1 cup milk ( I left the milk out of the photo below...boo!)
2 to 3 cups cherries
9 x 9 pyrex
Cook time: 45 mins to 1 hour

I forgot the milk in this photo.

Step 1: Add whole stick of margarine (at room temperature) to bowl with 1 cup of sugar. Mix with spoon. It will be lumpy but as long as the sugar is pretty much mixed you are OK.

Step 2: Add 1 cup flour and 1 cup milk and stir with spoon. Your mixture will have some small lumps.

Step 3: Pour mixture into 9 x 9 pyrex dish.

Step 4: Add cherries down center and top with 1/2 to 3/4 cup of sugar. Oh and I didn't use enough cherries (I used a little less than 2 cups) because the point of having them in the center is that you are supposed to see them in the middle through the crust. Oh well.

The finished cobbler doesn't have to be this brown on top (I had a neighbor interrupt my baking skills and I forget that it was in the oven and it cooked just a little too long). But the top should be lightly browned and a little crisp around the edges. Also, you can jiggle the cobbler while it's in the oven and if it looks like it has lots of liquid underneath the forming crust then it will need more time. 

Cobbler is best served warm and most like to have it with a scoop of vanilla ice cream but this weirdo doesn't like vanilla ice cream so I enjoyed it all by itself. My favorite cobbler is blackberry but I couldn't turn down trying this out with fresh cherries. This is a favorite in the summer at my family get togethers.
