A Weekend Craving: Southwest Turkey Chili

Spring has far from sprung in Virginia yet, much to our disliking. So what is one to do when handed a snowy Sunday afternoon?? Why one makes chili, of course. In fact, Jayme & I were both making this chili at our respective homes at the very same time. So while it looked a lot like this outside...


Inside we were getting warm by chowing down on this...


Ingredients:
1 tbsp vegetable oil
1 lb ground turkey
1 large onion, chopped (about 1 cup)
2 tbsp chili powder
1 tsp ground cumin
1 tsp dried oregano leaves, crushed
1/2 tsp ground black pepper
1/4 tsp garlic powder or 2 cloves garlic, minced
1 3/4 cups Swanson chicken broth
1 cup Pace Chunky Salsa
1 tbsp sugar
1 can (15 oz) black beans, rinsed and drained
1 can (16 oz) whole kernel corn, drained

Directions:
Heat the oil in a 4-quart saucepan over medium-high heat. Add the turkey, onion, chili powder, cumin, oregano, black pepper and garlic powder. Cook until turkey is well browned, stirring often to separate meat.

Stir the broth, salsa, sugar, beans and corn in the saucepan and heat to a boil. Reduce the heat to low. Cover and cook for 30 minutes or until the mixture is hot and bubbling.

Tip: Serve with tortilla chips and top with a little shredded cheese.


I have to thank my friend Aimee for sharing this recipe with me (I think it originally comes from Campbell's Kitchen). She recently made it for us and we knew this one was a keeper!

  3. A good book, a blanket, the couch, and a bowl of mac n cheese always helps :) We got snow dumped on us in Ohio too. Hopefully spring comes soon! Heather

  4. Yum! That looks delicious. We too, are getting a big dusting of snow over here. That means I have an excuse to stay indoors under a blanket all day.

  5. That chili dose look good :) Here in Montreal,Canada we are facing the same snowy weather here too and normally, our last snow storm of the year always hits around mid-april. When its still cold outside, I like to site down with a good book and a blanket on my legs to keep warm.

    Right now, I am just catching up on you blog post that I did not had time to read in the past 3-4 months due to this work contract that I was doing(which it ended a couple weeks ago)...
