Pork. That's what. And potatoes.
Can you tell that I have a "meat & potatoes" kind of hubz? This was a home run at our house recently, so I thought I'd share a recipe with you guys once again...
1 Peppercorn Pork Tenderloin (any brand or flavor will do -- doesn't get any easier than that)
Preheat your oven to 375 degrees. Place the pork loin in a shallow roasting pan (hint: line the pan with aluminum foil for easy clean up). Cover the pork loin with aluminum foil & bake for 40 minutes, then uncover & bake another 5 to 10 minutes (the internal temperature should be 160 degrees). Let stand 5 minutes before slicing.
Smashed Red Potatoes
9 Red Potatoes (cut into wedges)
2 tbsp Olive Oil
3 tbsp Butter
1 tsp Salt
1/2 tsp Pepper
Fresh Basil
Fresh Oregano
Place your potato wedges into a large pot & cover with water. Bring to a boil.
Reduce heat to medium; cook, uncovered for 15-20 minutes or until tender. Drain & place potatoes into a bowl. Coarsely mash & add the olive oil, butter, salt, pepper, basil & oregano.
I added some corn to the mix & "BAM"...dinner's ready. And it pleased our tummies...

That looks great! I haven't tried one of the pre-seasoned tenderloins but I do cook the plain ones all the time around here.
ReplyDeleteI like to salt & pepper them and either mix mustard and apricot preserves and glaze an almost done loin, or cover one with every herb in the house and poke holes and stuff in slivers of fresh garlic. When the garlic's soft, it's usually done.
Baked then mashed sweet potatoes (or acorn squash) w/ brown sugar, cinnamon & butter has been a regular thing around here too!
You must have read my mind! I've wanted to make pork tenderloin with potatoes for soo long now. Mmm that looks soooo good!

This looks entirely delicious! I have a meat and potatoes man too. One of our favorite ways to fix pork loin is with Paula Dean's recipe for pork Loin with Blackberries & Onions. Simply DIVINE! I promise!!

ReplyDeleteI have a pork tenderloin marinating right now! I sometimes do a teriyaki marinade overnight, or as long as I have, then roast as usual. We also do a smashed potato and sometimes add a bit of chunky blue cheese dressing to them, it's so yummy!

ReplyDeleteyum yum yum! tenderloin is so easy to make and tastes so delicious. Have you tried just grilling it with a rub of freshly chopped herbs and some olive oil? fantastic.
